Texas Bake Shops

I-35 / Waco

Collin Street Bakery has just built its 3rd location at Bellmead, near Waco, on I-35 and Hwy 31 (exit 338A).

Featuring custom-made sandwiches made fresh daily from our own unique breads, home style soups, garden-fresh salads, and gourmet coffees at our Cinchona Coffee Bar. And of course, all the other bakery goodies you love, like artisan breads, dozens of varieties of cookies, pies, cakes and pastries.

The bakery's Southern Plantation Style architecture reflects its founding in Corsicana in 1896. You'll be greeted with tall white columns, big windows, high ceilings and lots of shopping room. Plus a warm and inviting dining area where you can grab a meal and relax from the road for a while.

Thank you for a wonderful experience. Your bakery and dinning facility was one of the best I have been to. The fruitcake was wonderful.

Stopped by last Sunday - thanks for wonderful lunch of soup and sandwiches for the family. Great food, good prices, and the pecan pie we took home was the best I've ever eaten.

My family and I stumbled upon your bakery on our way to Dallas last year & now try to come up once every 2/3 months. We are taking our son there in a few weeks to get some treats for his birthday before heading to the zoo. CAN'T WAIT! Everything we have tried there is delicious... from the cookies, to the raisin bread, to the soups!

OH MY GOODNESS! This was the first time for us to try the fruit cakes, we stopped in to get a sandwich after being on the road and they had a special buy 2 for $25.00. We got the blonde and the apricot and it was SO GOOD...SO MOUTH WATERING. YOU JUST CAN'T STOP EATING IT. GOTTA TRY IT IF YOU HAVE NEVER DONE SO. YUMMY!

A Texas size THANK YOU to the manager and staff in Waco. The location is beautiful, clean and of course the food is excellent, but it's the people that make it successful. I will continue to shop there and tell others of my experience. Traveling from Austin to Fort Worth last week I stopped in for one of the delicious pies. While there I lost a ring that was very special to me. I called and spoke with the manager the next morning and he said no one had turned in a ring but was kind enough to take my name and number. Expecting never to hear from him, I was surprised to receive a call later the same day. An older couple had found my ring. I am very thankful to them for turning it in and for the manager who took time out of busy day to see that it was returned to me.

Our local homeschool group took a tour of the bakery in Waco. All the staff were very friendly. They did a wonderful job teaching our kids about the history of the business and what goes on daily at this store. The samples were delicious too! I always thought sugar cookies seemed boring until I tasted the ones made here. Thanks for taking time out of your busy schedule to show us around and answer all of our questions!

The sugar cookies are my all time favorite!!!

This is an AMAZING location -- it is clean and the staff are very nice. I bought the apple pie -- and although I am not very much of a pie person, it tasted great. Later on, I bought a chicken salad sandwich and a tomato-based noodle soup! SO GOOD!
This location is the perfect place to study -- there are plenty of tables, plugs, and free Wi-Fi! Plus, the staff are really receptive of students. The manager (I believe) came up and greeted me, which was a very nice gesture to make. Collin Street Bakery (Bellmead location) is now my favorite place to study and go get desserts!

I had ordered the fruitcakes for the holiday season in years past and missed them. This year, I ordered one for our family holiday gathering. My family and friends, who don't like fruitcake, were surprised at how delicious it was. They are full of fruit - moist and wonderful! Thank you Collin Street bakers!!!

Thank you so much to the manager and the wonderful staff at the Collin Street Bakery in Waco. You did a great job of feeding our entire 4th grade and 40+ sponsors. We were returning from a day trip to Austin and stopped in Waco for dinner. The friendly staff had everything ready to go when our 3 buses arrived and met us with a big Texas smile! The food was fresh and delicious and greatly enjoyed by all. In years past we have ordered box dinners from another vendor and eaten on the buses. However, everyone agreed that being able to get off and enjoy a meal inside was SO much better. The staff was efficient and we were back on the road in under 40 minutes! Collin Street Bakery will definitely be a part of our trip again next year!

I have received brochures for years but never had the chance to visit. Let me just say this: WOW, the service, food, and everything was so beyond real. The "dilly bread" tasted just like eating a dill pickle. The only problem was that I wish I had enough cash to get a fruit cake. We were running short on cash on the way home from vacation. Everything was wonderful. The apricot pie was awesome. Believe me, I do not normally comment on sites but this is an exception to the rule. We have visited bakeries all over the world and this is the best, no kidding. We have Amish bakeries close to us but the items we purchased beats them all, hands down. It is worth the 5 hour trip to go back at least 3 times a year.

What a great bakery and a many-decades tradition for our family. Even though it was near closing time, Chris and the whole staff went the extra mile to serve our large group with wonderful hospitality. Thank heavens we did not have to return home to California without cherry icebox cookies! Thank you CSB.

We recently visited the Waco location and were astounded by the excellent service and beautiful new building. Chris treated us like royalty and patiently waited on us after closing time so we could travel home to New Mexico with cherry icebox cookies. Also, he was very knowledgeable about every baked item in the store and willingly offered many delicious samples. We tried the Genuine Cinchona coffee for the first time and now it is a new favorite. Thanks for a great experience!

I've stopped several times to enjoy your lunch sandwiches, and almost always purchase some of your delicious macaroons. I especially like to send out your apricot pecan cake to my brother and sister for Christmas.

I called the Waco Location yesterday to see if I could get a birthday cake on a short notice for my husband. I spoke to one of the bakers there. He said that he would make a cake for me. He and I decided on the Italian cream with Happy Birthday written in red. Well I went to pick it up at the time he said that it would be ready and I noticed that the red was not as dark as it should have been, it looked pink. I told the lady at the register and she said that she would take it to the back and have the baker fix it. I waited approx 5 min when someone called my name, I looked up and saw this wonderful smile and a man holding the cake. He apologized and was so friendly. I would like to thank him for the wonderful experience he gave me. He went out of his way to satisfy my expectations! The cake looked wonderful but the taste was well worth it! He created a wonderful WOW factor! What a wonderful employee, wonderful place. Way to go! Thanks for all you did to make my husband's birthday one we will never forget. My hat goes off to you!

Yesterday, we stopped in at your new location in Waco and were so impressed, not only with the lunch sandwiches and soup we ordered and the pleasant ambience, but most of all with your staff! You have the BEST staff --- everyone was so friendly and professional. The warm hospitality of your staff is outstanding and very rare to find these days! The pecan and praline bites were the best for me. My daughter loved the icebox cookies and my husband loved the fruitcake cookie. We're definitely making it a point to stop by each time we're in the area. Thank you for making our first time visit one we'll never forget. We are highly recommending your place to our friends. Much success to you all!

I love Collin Street Bakery. My sorority uses the front room for our committee meetings. We meet, plan, eat and get things done. The service and food is phenomenal. It's just awesome.

I also had my daughter's baby shower there. Our guests had a great time. It was different and refreshing to know that there was a place to go to set up your own atmosphere and have fantastic service provided.

Thank you for coming to Waco!

I live in Killeen, TX. I drove my mother to the Waco location the beginning of April for Tea and Cakes-she loved it!. I bought the Cinnamon Loaf Bread and the Pecan Bread. I love both!!! I made a bread pudding with the cinnamon loaf that was a hit for Easter. I ate the pecan bread toasted with syrup like french toast...YUMMY!!!!!!

I so pray that Collin Street Bakery will open a location in Killeen. We so need you to bring a delicious bit of sunshine to our town.
